The FSSAI syllabus for direct recruitment has two halves: a general part (reasoning, general awareness, English and computer literacy) and a functional knowledge part built around food laws, the work of FSSAI itself and food science. Technical Officer and Central Food Safety Officer (CFSO) candidates then sit a second computer based test that goes deeper into food science.
FSSAI does not hold one fixed exam every year. It recruits when posts fall vacant, and each advertisement prints its own scheme. What follows is the pattern and topic list used in the most recent direct recruitment cycle, so you can start early and then match it against the new advertisement when it appears.

How FSSAI selection works
Every post starts with CBT Stage 1. For most ministerial and IT posts, that single test plus document verification decides the merit list. For Technical Officer and CFSO, the board shortlists candidates from CBT 1 for a second test, CBT Stage 2. In the last cycle the Technical Officer merit list gave equal weight (50% each) to the two stages, while CFSO used both stages without a stated weightage. Senior posts such as Assistant Director or Deputy Manager may include an interview.
FSSAI exam pattern for CBT 1, post by post
All posts face 120 multiple choice questions in 180 minutes with the same marking: a correct response earns 4 marks, an incorrect pick loses 1, and blanks score zero. What changes is how those 120 questions are shared out.
| Section | Technical Officer, CFSO, AD (Technical) | Assistant, Junior Assistant Grade I | Assistant Manager (IT), IT Assistant |
|---|---|---|---|
| General intelligence | 10 | 20 | 10 |
| General awareness | 10 | 20 | 10 |
| English language | 10 | 10 | 5 |
| Computer literacy | 10 | 25 | Part of functional knowledge |
| Quantitative aptitude | None | 20 | None |
| Functional knowledge | 80 (food laws 20, FSSAI role 20, food science 40) | 25 (FSSAI role and functions) | 95 (IT subjects) |
| Total | 120 | 120 | 120 |
For the technical posts, two thirds of the paper is functional knowledge. That block decides the merit list, so your hours should follow the same ratio.
CBT Stage 2 for Technical Officer and CFSO
CBT 2 runs for 180 minutes, carries 80 questions and is marked out of 240. It mixes six question formats, each with its own marking rule.
| Question format | Questions | Correct | Wrong | Section marks |
|---|---|---|---|---|
| Single correct option | 30 | +2 | minus 0.5 | 60 |
| Multiple correct options | 20 | +4 | Negative, see the notice | 80 |
| Fill in the blank (two blanks) | 5 | +4 | minus 1 | 20 |
| Fill in the blank (one blank) | 10 | +4 | minus 1 | 40 |
| Comprehension | 10 | +2 | minus 0.5 | 20 |
| Matching list | 5 | +4 | minus 1 | 20 |
The penalty for the multiple correct section has been printed differently in different notices and reports, so read it in your own admit card instructions. The topics for this stage are the food science areas: processing and packaging, chemistry and nutrition, and microbiology and hygiene.
Detailed FSSAI exam syllabus: functional knowledge
Food laws, Indian and international
- Food Safety and Standards Act, 2006, its rules and the main regulations (licensing and registration, standards, labelling, contaminants, packaging)
- Other Indian laws and bodies linked to food, such as weights and measures and export inspection
- Codex Alimentarius and its committees, WTO agreements on sanitary measures (SPS) and technical barriers (TBT)
- Accreditation and standards bodies
FSSAI role, functions and initiatives
- History and structure of the authority and the role of state food safety departments
- Standard setting, enforcement, the food testing laboratory network, import clearance and third party audits
- Public health drives on safe, healthy and fortified food, and training and capacity building
Food science (40 questions for technical posts)
- Preservation, processing and packaging: unit operations, good manufacturing practice, thermal and non thermal preservation, packaging materials
- Chemistry and nutrition: macro and micro nutrients, additives, anti nutritional factors, enzymes, nutraceuticals, contaminants and adulterants, allergens, diet and lifestyle diseases
- Microbiology and hygiene: foodborne pathogens, spoilage, food poisoning, testing methods, useful microbes, HACCP, traceability and recall
- Analysis and testing: sampling and statistics, classical and instrumental methods (chromatography, spectroscopy, mass spectrometry, molecular methods), quality assurance
General sections: reasoning, awareness, English, computer
- General intelligence: analogies, picking the odd item, number or letter sequences, coding, arithmetic reasoning, spatial visualisation, decision making
- General awareness: India and nearby countries (their history, culture, geography, economy, polity and Constitution), sports, science in the news, and current affairs
- English: reading comprehension, one word substitution, synonyms and antonyms, spellings, error spotting, idioms
- Computer literacy: word processing, spreadsheets, presentations, email, online documents, digital signatures
- Quantitative aptitude (Assistant level only): percentages, ratio, averages, simple and compound interest, buying and selling sums, work and time sums, data tables
At 10 questions each for the technical posts, these sections reward quick, steady accuracy rather than months of study. Two short practice sets a week usually keep them in shape.
Eligibility in brief
In the last cycle the upper age was 30 years for Technical Officer and CFSO, 35 for Food Analyst and the Assistant Director posts, and 25 for Junior Assistant Grade I, with the usual central government relaxations for reserved categories.
- Technical Officer: a master's degree in chemistry, biochemistry, food technology, microbiology, biotechnology or an allied science, or a B.Tech in a food related branch, or a medical or veterinary degree, as listed in the advertisement
- CFSO: a degree in food technology, dairy technology, biotechnology, oil technology, agricultural science, veterinary science, biochemistry or microbiology, a master's in chemistry, or a medical degree
Qualifications are listed post by post and FSSAI interprets them strictly, so match your degree title against the exact wording.
Study plan built on the FSSAI syllabus weightage
Start with the FSS Act and the FSSAI website, because 40 of the 120 questions in CBT 1 for technical posts come from laws and the authority's own work, and very few graduates have studied either in college. Read the Act chapter by chapter, then the main regulations on licensing, labelling and contaminants.
For food science, your degree textbooks and the standard reference books in food technology, food chemistry and food microbiology cover nearly everything. Science graduates preparing for related roles may also look at the lab assistant science syllabus or the agriculture supervisor syllabus, which share chemistry and biology basics.
How to keep track of new advertisements
FSSAI posts its recruitment notices, revised schemes and result lists on its careers page. Because the gap between cycles can be long, many aspirants also prepare for other science and state level exams at the same time; our state exams hub and the ICAR syllabus page are useful starting points. When a new advertisement appears, compare its scheme line by line with this page and adjust only what has changed.
Frequently asked questions
Does FSSAI hold an interview after the CBTs?
For Technical Officer and CFSO, the last cycle used CBT 1 and CBT 2 without an interview. Some senior posts may include one. The advertisement for each cycle states this post by post.
Does FSSAI CBT 1 have negative marking?
Yes. Each right answer earns 4 marks, every error takes away 1, and a skipped question scores zero. With four options, a blind guess is a poor bet, but a guess after ruling out two options is usually worth taking.
Which part of the FSSAI syllabus is most important?
For technical posts, functional knowledge: 80 of the 120 CBT 1 questions, split into food laws (20), FSSAI's role and initiatives (20) and food science (40). Food science also dominates CBT 2.
Can a B.Sc graduate apply for CFSO?
Only if the degree is in one of the listed subjects such as food technology, dairy technology, biotechnology, biochemistry, microbiology or agricultural science. A plain B.Sc in another subject usually does not qualify, so check the wording in the advertisement.
Is the FSSAI exam held every year?
No. FSSAI recruits when it has vacancies, and the gap between advertisements varies. Watch the official careers page and prepare the laws and food science part early, since that part changes little.
What is the FSSAI syllabus for Assistant posts?
Assistant and Junior Assistant Grade I candidates sit one CBT of 120 questions: reasoning 20, quantitative aptitude 20, English 10, general awareness 20, computer literacy 25 and FSSAI's role and functions 25.
